Over The Rainbow.

If you have toddlers, this cupcake recipe is PERFECT for St. Patty's day, or just ANY fun day!  It makes a mess, but I seem to make a mess EVERY time I bake! :) All you need is a box of white cake mix and food coloring.  I used six bowls, but I think six cups would have worked better so you can pour each layer instead of scoop. 

We had such a great time making these for Betsy's class, I think we'll use the same concept to do red and blue ones with white icing for Jay's class on his birthday.

The kids loved LOUDLY counting the food color drops, stirring the batter, watching the batter change color and licking ANY utensil with batter on it!  It was kind of like dyeing Easter eggs and the dye was EDIBLE!
